Freeform Rum Bread

I had some free time to kill last weekend, so I thought I'd try my hand at some recipe-less baking. Like most of my baking, it came out a bit on the dense side - I need to learn to accept a wetter looking dough. But in this case, that wasn't a bad thing. The final consistency was a lot like pound cake. A very, very rummy pound cake.

  • 4C all-purpose flour
  • 2tsp baking powder
  • 1C brown sugar
  • 1tsp salt
  • 2 eggs
  • 1/2 vegetable oil
  • 1C milk
  • 3/4C dark rum
  • 1/2tsp cinnamon
  • a handful of raisins - say half a cup

Ham-burgers with Cajun Mayo

An unexpected grilling opportunity meant a chance to throw together some random burgers. These ham & havarti stuffed hamburgers came out alright, even if I did overcook them a bit. The Cajun mayo definitely worked though. Amounts are mostly approximation. I didn't measure; you don't have to either.

Burgers

  • 1lb ground beef
  • 1/2 medium onion, diced
  • 2tsp worcestershire sauce
  • 1/2tsp salt
  • 1/2tsp black pepper
  • 2T tomato paste
  • 2oz ham (I used pizza-sliced Canadian bacon)
  • 2oz havarti, shredded
  • Buns
  • Green bell pepper

Potato Pancakes

Potato pancakes

We had some potatoes left over from the Storyhillfest trip, so I decided to try my hand at making some potato pancakes. They came out pretty decently. I may try using a little less flour next time, since the dough/batter never truly comes together anyway. Less flour would be a little crisper, I think. Nevertheless, a simple recipe for cakes that are tasty in their own right or could serve as the base for a more elaborate dish. My favorite topping was salsa, although I tried cayenne pepper sauce, jelly, and jam, too, and wasn't disappointed with any of the combinations.
