Ham-burgers with Cajun Mayo

Cajun burger

An unexpected grilling opportunity meant a chance to throw together some random burgers. These ham & havarti stuffed hamburgers came out alright, even if I did overcook them a bit. The Cajun mayo definitely worked though. Amounts are mostly approximation. I didn't measure; you don't have to either.


  • 1lb ground beef
  • 1/2 medium onion, diced
  • 2tsp worcestershire sauce
  • 1/2tsp salt
  • 1/2tsp black pepper
  • 2T tomato paste
  • 2oz ham (I used pizza-sliced Canadian bacon)
  • 2oz havarti, shredded
  • Buns
  • Green bell pepper
  • Cajun mayo (recipe follows)
  1. Combine beef, onion, worcestershire, tomato paste, salt, and pepper.
  2. Divide into 4 quarter pound portions. Flatten half of each portion into a burger shape, top with ham and cheese, then top with the other half. Press the edges to seal so cheese doesn't leak while it's cooking.
  3. Cook over a hot grill until done, turning once

Cajun mayo

  • 1/3C mayo
  • 1/2tsp salt
  • 1/2tsp black pepper
  • 1/2tsp white pepper
  • 1tsp paprika
  • 1tsp onion powder
  • 1/4tsp cayenne (or more, depending on desired heat)

Place finished burgers on toasted buns, topped with green pepper ring and mayo.
